Getting the Most Lutein from SPINACH

Found in many leafy greens, the antioxidant lutein may help prevent macular degeneration (the most common cause of irreversible vision loss in seniors), among other conditions.

A Swedish team prepared baby spinach in various ways to see how much of this nutrient was bioaccessible in each dish.

Boiling, streaming or frying it degraded much of its lutein.

But reheating it in the microwave compensated for this loss somewhat by making it release more lutein.

The best method of all, even better than leaving the raw leaves alone, was liberating their lutein by liquifying them in a smoothie.
